I made my annual batch of pork meatballs in gravy, and will post pictures below which will help in visualizing the methods set out in the recipe. You'll notice the amount of broth in the pot with the roast of beef and pork. I stuck the pot in the snow so the lardy fat would rise to the top (I ended up sticking it in the fridge overnight because it hadn't set enough by the time I was ready for bed).Once the broth was strained, the meatballs were simmered, and the pork and chicken were set back into the the pot.
